UM na Národní hosted a Back to the Roots pop-up dinner dedicated to game. Throughout the evening, the chefs showcased contemporary ways of working with game and created a menu centered around this distinctive seasonal ingredient. The dinner followed a Back to the Roots educational seminar, which connects theory with practice and chefs with people who work with individual ingredients from their source to the kitchen.
