Canadian chef Ron McKinlay has accepted an invitation from the Ambiente creative chefs to come to Prague. And on Thursday, March 26th, he'll prepare a seven-course tasting menu at the Čestr restaurant inspired by the Czech season and his fondness for lamb. There'll be a team of experienced chefs from Ambiente by his side
What can you look forward to tasting?
Beef tartare, pickled apple, foie gras parfait, horseradish
Onion, Parmesan custard, bay leaf oil
Smoked trout and scallop, cuttlefish ink, Jerusalem artichoke bisque
Bread and butter with nettle, lamb jus and drippings
Lamb consommé
Lamb loin, celeriac, lovage, creamed nettles
Charred nori tart, nori chantilly, brown butter cream
Ron works with simple ingredients, which he transforms into an exceptional dining experience through his mastery of classic French techniques. Throughout the evening, you’ll have the chance to hear directly from Ron about the inspiration behind the menu. With the open kitchen and glass-walled butcher’s room, you can also peek behind the scenes and watch the action unfold.
